About Oolong Tea Oolong teas have a withering and oxidation process much shorter than black teas but longer than green teas. They share some taste and characteristics of both black and green teas. The oolong process adds complexity and time to this type, often reflected in the price. Formosa Oolong, a popular and traditional type of tea from Taiwan, reflects leaves dried in the sun versus heated sheds and produces remarkably vibrant aroma. Oolongs are known for their sweet almost honey-like flavors, but also for their richness. Most oolong tea can be brewed for many infusions, maintaining unique flavors in each infusion. Some oolongs are more delicate than others and require less than boiling water, ranging from 180 to 190 degrees Fahrenheit.
